To plan, organize, direct staff, and control all bar, wine stocks and cash, in order that the departments achieve at least the budgeted gross profit, whilst maintaining and improving existing operating standards as set down by management. To ensure the smooth and efficient operation of the Bar thus ensuring guests receive the highest possible standards of service at all times.. To ensure all Hygiene and Health and Safety standards are maintained. 1. MAIN DUTIES: To supervise the activities of the Bar, thus ensuring the quality and standards of service are maintained at all times To lead and motivate all members of staff in the Bar in order to obtain maximum commitment. To exercise effective stock rotation and maintain stock levels To suggest and organise ways of up-selling for your department, and maximising departmental profits. To ensure that the bar area is kept clean and tidy at all times. To ensure that a cleaning schedule for all the bars is provided for staff and to ensure that these duties are carried out on a regular basis to the highest standards of hygiene. To compile staff rosters on a weekly basis, and keep an accurate record of all staff annual leave entitlement and annual leave taken by staff.
