We are looking for a highly skilled and dedicated Assistant Head of Bakery. This role goes far beyond baking; it's about leadership, driving operational excellence, implementing efficient systems, and helping to cultivate a high-performance team culture.
Job Responsibilities:
Create new recipes and bakery items for store offerings
Oversee all facets of bakery production, including quality control, production and finishing, cutting, packaging, and accurate dispatch to customers.
Oversee full production when the Head Chef is unavailable
Conduct daily/weekly team briefings and set operational expectations
Oversee the production area to ensure optimal productivity, effective scheduling, staff planning and training, while maintaining a safe and positive working environment.
Ensure timely receipt of all shop orders and coordinate deliveries via email
Guarantee on-time product dispatch with accurate labelling and counts
Communicate with customers regarding special orders (e.g., birthday cakes)
Perform hygiene and safety inspections in accordance with HACCP standards, including checks of tables, shelves, floors, equipment, tools, staff uniforms, and the delivery/receiving bay.
Plan and direct production output by assessing current menu effectiveness
Manage staff attendance and headcount during high-volume days
Support the bakery retail counter and shop operations
Collaborate with store and retail managers to develop operational standards and drive cost-reduction initiatives.
Maximize staff productivity to control payroll costs
Monitor operating expenses and take corrective action to reduce waste
Lead recycling and waste-reduction initiatives
Manage department inventory, in-stock levels, pricing, and merchandising
Implement company-wide sales and production standards
Ensure the bakery department meets performance goals outlined in work plans
Plan and order stock to maximize sales and gross profit
Ensure all new team members are properly trained and supervised
Oversee receiving, unloading, storage, rotation, and display of all merchandise
Key Requirements:
Expertise in artisan bread making, with hands-on experience in sourdough and traditional techniques
Proven leadership skills in managing and motivating teams of 15 or more staff members.
Impeccable communication skills, with strong spoken and written English for effective cross-team collaboration
Proficient in creating, implementing, and monitoring operational and administrative systems
Ability to work under pressure.
Job Types: Full-time, Permanent
Pay: AED7,000.00 - AED9,000.00 per month
