Job Description

We are seeking a skilled and passionate Mandi Chef to lead the preparation and cooking of traditional Mandi dishes, including chicken, lamb, and fusion varieties. The ideal candidate must have in-depth knowledge of authentic Arabic cooking techniques and spices, particularly in handling underground tandoor (pit-style) cooking and rice preparation.

Key Responsibilities:

Prepare and cook authentic Mandi dishes (chicken, lamb, etc.) using traditional methods. Marinate meats with appropriate spices and ingredients for Mandi. Manage and operate traditional clay ovens or underground pits for Mandi. Ensure food quality, taste, and consistency align with the restaurant's standards. Monitor inventory, order ingredients, and manage kitchen hygiene and cleanliness. Train and supervise junior kitchen staff. Innovate and experiment with new Mandi variations (e.g., Butter Chicken Mandi) while maintaining authenticity. Comply with food safety and sanitation regulations.

Requirements:

Proven experience as a Mandi Chef or in Arabic/ Yemeni cuisine. Strong knowledge of traditional Mandi recipes, spice mixes, and cooking techniques. Ability to work under pressure in a fast-paced kitchen. Attention to detail and commitment to delivering high-quality dishes. Strong communication and team leadership skills. Flexibility to work evenings, weekends, and holidays as required.

Preferred Qualifications:

Culinary degree or formal training in Arabic cuisine (optional but preferred). Previous experience in the Gulf region or Middle Eastern restaurants. Ability to adapt to modern culinary trends while preserving traditional flavors.

Salary : 2000 to 3000 AED
